I have ditched SampleTank (or want to) in favor of Kontakt 8 Player..I’m struggling trying to figure out how to assign specific patches to specific tracks in RB. Any aids/videos that might be useful, or anyone on here who might be willing to give a little guidance? Thanks.

You'd have to assign a separate Kontakt instance for each track, from what I know, unless K8 is different.
I do not work here, but the benefits are still awesome

One easy way to load a separate instance would be to right-click on the MIDI track in the Tracks Window, and then choosing "Specific VSTi/DXi synth for MIDI track" and then selecting Kontakt in the sub-menu to load it into an unused synth slot (there are 32 synth effects group slots total). If it's a VST3 version of Kontakt you want to load, then in that same sub-menu you would choose "select VST3i plugin" . Then click on the F/X button on the track to load Kontakt with the VST3 selector.

It is the same as previous versions, in that it is not a General MIDI compatible synth plugin - this means it does not respond to regular MIDI patch change messages like those that BB or RB send. For any plugin to work as the "default synth" in either BB or RB it needs to be General MIDI compatible - something like VSTSynthFont or HALion/HALion Sonic. Jeff's instructions are the best way to use Kontakt in RB.
